Ingredients

  • 250g minced chicken

  • 2 cups cooked noodles (egg noodles or wheat noodles)

  • 1/2 bell pepper, sliced

  • 1/2 cup cabbage, shredded

  • 1 dried red chilli, broken

  • 1 small cinnamon stick

  • 1 star anise

  • 1 tbsp Shaoxing wine

  • 1 tbsp sesame oil

  • 1 tsp Sichuan peppercorns

  • 1/2 tsp five spice powder

  • 1.5 tbsp hoisin sauce

  • Salt to taste

  • Optional: chopped green onions or sesame seeds for garnish

Instructions

1. Infuse the Broth

In a small saucepan, combine 1.5 cups water or chicken stock, Shaoxing wine, hoisin sauce, Sichuan peppercorns, cinnamon stick, and star anise. Simmer gently for 10 minutes to extract flavors. Strain and set aside.

2. Cook the Noodles

Boil the noodles as per packet instructions. Drain and toss with a few drops of sesame oil to prevent sticking.

3. Stir-Fry the Vegetables

Heat a wok or pan with a teaspoon of sesame oil. Add bell pepper, cabbage, carrot, and red chilli. Stir-fry on high heat for 3–4 minutes. Remove and set aside.

4. Cook the Chicken

In the same pan, add a little more oil if needed. Sauté the minced chicken until fully cooked and slightly browned. Season with a pinch of salt and the five spice powder. Pour in the infused broth and simmer for 3–4 minutes.

5. Bring It All Together

Add the noodles and stir-fried vegetables to the pan. Toss everything together until well coated in the sauce. Let it simmer for 2–3 minutes so the noodles absorb the flavors.

6. Serve Hot

Garnish with chopped green onions, extra chili oil, or toasted sesame seeds if desired. Serve immediately.
